Home isolation has required something seriously chocolatey and these Triple Chocolate Keto Coconut Flour Brownies have answered the call. They have it all, the chocolate chips, a decadent chocolate frosting. Really, this is a seriously rich chocolate brownie, perfect for chocolate lovers. Yum! Also, this recipe uses coconut flour, so for those that are low-carb and have a nut allergy, they are nut-free. Hooray!

Best of all, you can get it all done and in the oven within 30 minutes. Praise Be!

Oh and did I mention this keto brownie recipe is also gluten-free? It’s beyond exciting. So exciting, that when I was developing this recipe I was compelled to share the goodness by porch dropping samples to neighbours –– and the verdict is they are really, really good!

Much like my Super Fudgy Gluten Free Keto Paleo Brownies, you can freeze these Keto Brownies and save them for later. Just in case you anticipate a time of crisis that only a fabulous brownie could resolve, like I don’t know, a global pandemic?

And, of course, you may not be capable of making said keto brownies when that crisis hits. Truly, it’s good to be prepared. That’s right, make a double batch, and wrap up the second batch, without cutting it, in plastic wrap, then foil, and then in a freezer Ziploc just to make sure those precious irresistible chocolate pieces of perfection are safe from freezer burn. Then when the time comes, within three months, voila, your brownies will be there for you.

These Keto Coconut Flour Brownies are stand alone wonders.

What about adding some ice cream? Well, then we have some downright decadent awesomeness now don’t we?  You can go to my recipe for homemade vanilla ice cream and even spoon bits of brownie into your ice cream. You’d have a whole different level of ice cream if you did that (I see another recipe coming soon, don’t you?).

Honestly though. you don’t have to. These Keto Coconut Flour Brownies are stand alone wonders. It’s a bit different than my other brownie recipe, in that it isn’t quite as fudgy. That’s because with the sugar-free chocolate chips, and the ganache chocolate frosting, the keto brownie itself needed to be a little less rich in order to truly appreciate the triple chocolate combination.

Keto Coconut Flour Brownies with Frosting

I use a good quality dutch-process cocoa powder. Dutch processed cocoa powder is darker than natural cocoa powder and has reduced acidity. When baking using cocoa powder, your results may not be the same if you use a nature cocoa powder versus a dutch-processed one.

It took me about 25 minutes to get it my Keto Coconut Flour Brownies into the oven, including the few minutes to let the chocolate cool after being melted with the butter.

I use either a 9″ square pan or a quarter sheet pan that is 7″ x 11″ for my keto brownies. Either works well. My recipe uses allulose, as I find the best for this application. It’s hard to find in Canada, but I have allulose available in my store if you want to try it. If you use another sweetener, your baking time may be less. I line my baking pan with parchment and then lightly spray the parchment so the keto brownies come out easily.

Keto Triple Chocolate Coconut Flour Brownies

As these keto coconut brownies cool, I make the ganache–that’s the decadent chocolate frosting. To note, it’s important to add the chocolate to the simmered cream that is away from heat, and then the sweetener. Not the other way round.

Once it’s done, you can frost it right away. Then, let it set for a few minutes. Once the frosting has set, cut your pieces. I like small pieces for portion control. So they are like half pieces. If the first piece isn’t enough, I can have another but sometimes just one will do. I cut 32 pieces from whole brownie. 

And then … Yum!

Keto Brownies are best when you bake them to be slightly underdone. So, there may be a speck or two left on your cake tester and it may not have fully pulled away from the sides of the pan. However, if it seems like the centre is still just unbaked batter, give it two to three minutes and test again.
