This thing of beauty is a Keto clover club prohibition era cocktail, modified so it has no sugar. That simple modification makes this cocktail a perfect low-carb addition to your drinks menu. So exciting. Published versions of the recipe date back to 1917, where its unusual combination of ingredients made cocktail very popular at the time. The Clover Club is a bit tart but still sweet, and egg white provides body as well as a rich foamy head. Overall, the drink has complexity to make it visually stunning as well great tasting.
The only work you really have to do upfront is make the ‘Sugar-Free’ Raspberry Syrup. It takes about half an hour to make and then you have to let it cool. Ideally you will make this ahead of time, but once you do, you are set as it only takes a minutes to whip up your Keto Clover Club cocktail. Garnish with raspberries or a lemon wedge and it makes a fabulous dessert, or wows guests as a first cocktail before a meal.
Really presentation is everything so you are going to want to have the right glasses to show off this layered beauty of deep pink with that pinkish white whipped froth on top. Yum! I selected a champagne coupe styled glass as it finished the elegant look nicely. In a pinch a martini glass would do as well. No matter what glass you use, savour each sip and enjoy.
